The Big Doc Smash Burger Clinic
Diagnosis: your burgers are assembled, not composed. Prescription: proper smash technique and a sauce with a bedside manner.

You will need
- 1 lb 80/20 ground beef, in 8 loose 2-oz balls
- 8 slices American cheese
- 4 potato rolls, buttered and toasted
- 4 tbsp Big Doc Sauce (minimum effective dose)
- Shredded iceberg, minced white onion, dill pickle chips
- Salt โ more than feels polite
Treatment plan
- Get a cast-iron skillet or griddle screaming hot โ a drop of water should skitter and vanish.
- Drop 2 beef balls in, and smash flat with a spatula (press with a second spatula for leverage). Salt aggressively.
- 90 seconds untouched โ lacy brown edges are the goal. Flip, cheese immediately, 30 more seconds.
- Stack two patties per bun. Sauce the top bun like you mean it: a full tablespoon of Big Doc.
- Lettuce, onion, pickles, lid on. Serve before the cheese stops flowing.
