Chile-Lime Cure Street Corn (Esquites Consult)
Diagnosis: corn on the cob served naked, again. Treatment: char, butter, and a squeeze of lime β the full esquites consult.

You will need
- 4 ears sweet corn, shucked (or 4 cups kernels)
- 3 tbsp Chile-Lime Cure ghee butter
- ΒΌ cup crumbled cotija or feta
- 2 tbsp chopped cilantro
- 1 lime, quartered
Treatment plan
- Char the corn β directly over a gas flame, under a broiler, or in a dry cast-iron pan for kernels β until properly spotted with black.
- While hot, roll the ears in (or toss the kernels with) the Chile-Lime Cure so it melts into every crevice.
- Shower with cotija and cilantro.
- Serve with lime wedges and instructions to squeeze before every bite.
