  1. Heat the oven to 450°F. Boil the potatoes in salted water with the baking soda for 10 minutes — the alkaline water breaks down the surface into future crunch.
  2. Drain, then shake the pot hard so every piece gets rough and chalky at the edges.
  3. Toss with the fat and 1 tbsp Classic MD. Spread on a sheet pan with breathing room.
  4. Roast 45 minutes, turning once at 25 — do not crowd them, do not rush them.
  5. Hit them with the second tablespoon of Classic MD while hot. Serve to applause.
