Treatment Plan
Classic MD Crispy Potatoes, the Sunday Rounds Edition
Diagnosis: sad, soft roast potatoes. Treatment: parboil, rough up, season like a professional.

You will need
- 3 lbs Yukon Gold potatoes, peeled, cut in 2-inch chunks
- 1 tbsp baking soda (trust the science)
- 5 tbsp olive oil or duck fat
- 2 tbsp Classic MD seasoning, divided
Treatment plan
- Heat the oven to 450°F. Boil the potatoes in salted water with the baking soda for 10 minutes — the alkaline water breaks down the surface into future crunch.
- Drain, then shake the pot hard so every piece gets rough and chalky at the edges.
- Toss with the fat and 1 tbsp Classic MD. Spread on a sheet pan with breathing room.
- Roast 45 minutes, turning once at 25 — do not crowd them, do not rush them.
- Hit them with the second tablespoon of Classic MD while hot. Serve to applause.
