The Miso Caramel Doctor Sundae: An After-Dinner Referral

Diagnosis: dessert blandness presenting as vanilla ice cream, unaccompanied. Prescription: salty-sweet caramel therapy, applied warm.

You will need

• 4 scoops good vanilla ice cream (this is not the place to economize)
• 3 tbsp Miso Caramel Doctor, warmed
• 2 tbsp roasted peanuts, crushed
• Flaky salt
• Optional: one banana, split and seared cut-side down in a dry hot pan

Treatment plan

1. Warm the jar (lid off) in a mug of hot water for 2 minutes — pourable, not hot.
2. Scoop the ice cream. If using the banana, lean the halves against the scoops like they are recovering comfortably.
3. Pour the Miso Caramel Doctor with a confident wrist.
4. Peanuts, then the smallest pinch of flaky salt.

The miso is already doing the salty work — the extra pinch is for drama, which is also medicine.
